Shepherd's Pie
Ingredients: - 1.5 lbs ground beef
- 1-2 cups chopped vegetables (I used corn because thats all I had!)
- 1.5-2 lb potatoes (or instant potatoes)
- 8 tablespoons butter (optional)
- 1/2 cup beef or chicken broth
- 1 teaspoon Worcestershire sauce
- Salt, pepper, other seasonings of choice
Directions:
- Preheat Oven to 400 degrees
- Peel and quarter potatoes, boil in salted water until tender (about 20 minutes) OR PREPARE INSTANT POTATOES while meat and vegetables are cooking)
- Brown ground beef in large frying pan until no longer pink
- Melt 2 tbp butter in a large frying pan
- Add vegetables according to cooking time
- Add salt and pepper
- Add worcesterchire sauce
- Add 1/2 cup broth
- Cook UNCOVERED over low heat for 10 minutes (add more broth if needed to keep moist)
- Mash Potatoes in a bowl with remainder of butter and season to taste OR prepare instant mashed potatoes if you have not already
- Place beef and vegetables in baking dish
- Distribute mashed potatoes on top (rough up with a fork so that there are peaks that will brown nicely)
- Cook in 400 degree oven until bubbling and brown (about 30 minutes) -- broil for last few minutes if necessary to brown
